A true and essential specialty of Provence , calisson is recognizable by its unique oval shape and its brilliant white glaze. It's hard not to succumb to the crunchy and soft textures which release flavors of almonds, candied fruits and citrus fruits in the mouth.
The calisson is made from a sweet mixture of almonds and candied fruits (melons and orange peels). This surprising little white diamond with a tender heart is covered with delicious royal icing .
